Chelsea Caster Sugar
Very fine white sugar crystals make caster sugar able to dissolve easily. This feature makes it ideal for pavlova, meringues, puddings, jellies and cakes. When used in baking, the smaller sugar crystals caramelise evenly to produce a golden colour.
